Health Food Report
Lately I’ve been trying to be strict about eating gluten & dairy-free. I have a lot of food sensitivities, and I am trying to re-engage myself in the kitchen making new things that are delicious and don’t upset my stomach. I have found a wonderful new website called Elana’s Pantry that features recipes that are gluten-free, paleo, and more! The above photograph is her Paleo Pumpkin Bread, which is absolutely delicious, and exactly the kind of food I’m craving this time of year.
I quickly ordered her cookbook. All of the recipes use almond-flour and are gluten-free. There are pizza crusts, pie crusts, breads, and lots of delicious foods that I can’t wait to make.

There are additional products that Elana recommends, and I’m slowly trying to re-stock my pantry and make my own creations in the kitchen. Last night, for example, I grabbed brown rice penne pasta, dredged thin chicken breast in egg wash and almond meal, sauteed that in olive oil until crispy. Then I grabbed a jar of Muir Glen Organic marinara sauce, shoved in a mix of spinach and arugula leaves, added some more sea salt and Italian spices and simmered until the greens wilted. I served it up, and it was really filling and delicious.
